Broccoli with Fresh Fennel Soup Recipe
(serves 4)

Ingredients:

Strive for organic ingredients as much as possible

  • 1 large head of broccoli (cut into florets and stem peeled and diced)
  • 1 large onion, chopped
  • 4-6 cloves garlic, minced
  • 1 tbsp coconut oil, ghee or ricebran oil
  • Feathery tops from one bulb of fennel
  • 1 tbsp Nigari (magnesium chloride)
  • 1 tsp turmeric
  • 6 cups water or vegetable stock
  • 1-2 tsp ground fennel seed
  • Salt to taste
  • 2 tbsp chopped fresh parsley and spring onions chopped for garnish

Directions:

  1. Sauté onions, garlic, turmeric and ground fennel seed in oil until onion is translucent.
  2. Add broccoli stems and most of the florets, saving a handful of small ones to use later.
  3. Simmer until tender, about 15 minutes.
  4. Puree mixture in blender.
  5. Return to stockpot adding remaining broccoli and salt to taste.
  6. Simmer again for another 5 minutes.
  7. Garnish with fresh parsley and spring onions and enjoy.

You can add free-range, organic chicken to this recipe for a heartier soup.
